TURKISH LENTIL SOUP :
Red Lentils/Masoor Dal – 1 cup
Bulgur/Broken Wheat/Dhalia – 1 tbsp
Basmati rice – 1.5 tbsp
Olive oil – 3 – 4 tbsp
Onion – 1 large
All purpose flour – 1 tbsp
Tomato paste – 1 tbsp
Hot water – enough to make the soup
Mint leaves – a handful
Red chilly flakes – 1 – 1.5 tsp
Salt

PANEER SAMOSA :
Paneer crumbled – 1 cup
Spring onion – 2
Carrot – 1 small
Capsicum – 1 small
Ginger – a small piece
Garlic – 3 – 4 cloves
Green chillies – 3 – 4
Black pepper powder – 1/2 – 1 tsp
garam masala powder – 1/4 tsp
Salt
Ghee – 3 tbsp
Oily samosa sheets if baking

WATERMELON DRINK :
Frozen watermelon cubes – 2 cups
Orange juice – of 1 orange
Mint leaves – few
Sugar

FRUITS SALAD:
Fruits – watermelon, mango, grapes
Olive oil – 1 – 1.5 tsp
Chopped parsley – 2 tbsp
Chopped coriander leaves – 1 tbsp
Mint leaves – 3 – 4
Salt – 1/4 tsp
Black pepper powder – 1/2 tsp

BEEF KABSA
Beef pieces – 1 kg
Basmati rice – 2 cups ( 1 cup = 390 gms )
Onion – 2 large size sliced
Tomato – 3 medium size pureed
Tomato paste – 1 tbsp
Grated ginger – 1 tbsp
Orange zest – of 1 orange
Salt
Water – 2 cups
Cloves – 5
Cardamom – 4 – 5
Cinnamon stick
Cumin seeds – 1 tsp
Dried lemon – 1
Olive oil – 1/4 cup

CHUTNEY/SALSA
Tomato – 1 small
Garlic – 1 clove
Corinader leaves – a few
Cumin powder – 1/4 tsp
salt
Red chilly flakes – 1/4 tsp
Green chillies – 2 – 3
water – 2 tbsp

CURD MIX
Thick curd – 3 tbsp
